Slow Cooker Pulled Pork
Ingredients
4½ to 6 pounds pork butt or shoulder (ideally from organic, pasture raised pig)
2 tablespoon paprika
1 teaspoon oregano
1 tsp garlic powder (or 4 garlic cloves, chopped)
½ tsp crushed red pepper flakes
2 to 3 teaspoon Himalayan, celtic or sea salt (depending on how many pounds of pork)
½ teaspoon pepper
1 large onion, thinly sliced
1 orange juiced
2 teaspoons coconut aminos
2 tsp dijon mustard
Directions
Place the onions in the crock pot.
In a small bowl, make the spice rub by mixing the paprika, oregano, garlic powder, pepper flakes, salt and pepper together.
Rub the mixture over the roast and place the roast in the crock pot.
In another bowl, combine the orange juice, coconut aminos and mustard. Pour over the roast.
Cover and cook on low for 7-10 hours (time varies depending on your crock pot). When it’s done, the pork will shred easily with two forks.
Transfer to a wood cutting board, shred, then return to the juices in the crock pot.
Serving Suggestions
Warming Bowl: Pulled pork over mashed potatoes with a vegetable side of choice (such as green beans, pan fried Brussel sprouts or roasted broccoli). A spoonful of sauerkraut on the side is divine too.
Breakfast tacos: warm tortillas, scrambled eggs, pulled pork, shredded cheese, avocado and salsa
Breakfast plate: roasted potatoes, eggs, pulled pork and sour cream.
Notes
Go light on the maple syrup, use fruit for natural sweetness and don’t be afraid to add a nob of butter.
